I have to say this is a rather tasty supper!
Waiting for the man to come home for a late work trip, I sliced some mushrooms, with a dash of olive oil, a few grinds of black pepper, the stalks of some garden grown organic chard (Bright Lights) stalks followed with some spinach (also home-grown) and as I had it – not essential – some home-grown rocket and basil chopped up and added last-minute.
Add a little salt and pepper, stir, and top on toasted home-made bread add a poached or fried egg.
I’ve been watching the recent Springwatch shows, meaning eggs have been a feature in my mind, and the garden is starting to produce chard, spinach and mange tout peas (2 off in my dinner). which makes this my Springwatch supper!
